I also have a comal (which is a round flat skillet) and I using it for making tortillas, which I read is what its for and its so awesome, but also for cheese quesadillas and the like….Anyway, the key to making eggs not stick at all… like not even the tiny bit of gunk that you had left in the picture above is to make sure it is fully heated up all the way before putting the eggs in. It works every. single. time. And also works in stainless steel to a lesser extent.
